Here's what went into my guacatmole (all measurements are approximate, as I frequently don't measure anything when cooking): 4 avocados, mashed; 5 cloves gagarlic, chopped; 2 roma tomatoes, diced; a bunch of cilantro, chopped; juice and zest from 2 limes; salt; black pepper; chili powder; cumin; baker's sugar; and 1.5 jalapeños, chopped. It is to die for, if I do say so myself (I do).

My recipe for "guacamole" follows:

1. Cut up some avocados.
2. Scoop the slimy green stuff out of the center and put it into a bowl.
3. Remove the pits. (Easy to find, they're enormous!)
4. Mash up the remaining slimy green stuff.
5. Serve with some kind of tortilla chips.
6. When people complain about the taste, tell them to add their own seasoning.
7. Exit through preplanned escape route. (You do have a preplanned escape route, don't you?)

Geist, I didn't make an avocado dressing. I made an avocado "sauce" for the meat. That's the guacamole I listed above.

A tip to help the guac last is to store it with one of the avacodo pits in it, it tricks it into thinking its still whole and will not brown in the fridge over night! Works like a charm!

I also just squeezed a little bit of lemon juice as a top layer, the acidity helps to keep out the funky.
